Hyderabadi cuisine is a 400 year old princely legacy of the Nizams. While heavily influenced by Mughlai, Turkish & Arabic food it also has herbs of Andhra & Marathwada cuisine. It is special because of the use of carefully selected ingredients that are cooked for a specific time and degree. In fact, Hyderabad was known for the spectacular way its aristocracy entertained.
